From the winemaker: Each year we learn more and more about what these rare clones need. From the pruning, canopy style, ripeness level, and extraction, experience is the best technique. Made from Clones 2 & 31, our “rare Clones” Cabernet Sauvignon is a journey into what is possible in the Columbia Gorge. We fermented and aged the wine in our exclusive Tonnellerie Quintessence wooden eggs. The wine is a gorgeous dark garnet color with layers and layers of smoked paprika, river stone, dust, blackberries, and roses. Unfined (vegan). Unfiltered. Low Sulfur.
